I was told by InstallAnywhere support that I should try the 2012 Enterprise version, and the same is true of a simple and basic install project built with InstallAnywhere 2012.

It works on 10.7 and 10.8 systems with java 1.6.0_45 however once you update to 1.6.0_51 all installations exhibit this behavior. Looks like this is something to do with the latest Java update on the Macs.
